This Spanish melon has creamy white flesh with flavour reminiscent of honeydew melon and pear. Stores very well which may be the inspiration for its other names Santa Claus Melon or Christmas Melon.
For a refreshing sorbet cut a melon flesh into chunks, add a splash of condensed milk, ½ cup of sugar and ½ cup of lime juice. Puree in a food processor. Chill then freeze in an ice-cream maker as per operating instructions.
